THE DETECTION OF SPECIFIC FATTY ACIDS IN PLANT-BASED MILK AS INDICATORS OF FRAUDULENT PRACTICES

Vegetable milk is a healthy alternative for those avoiding animal products. The Russian dairy alternative market is growing rapidly, but manufacturers sometimes resort to fraud. The article examines the main adulterated products and describes marker compounds that can help identify them. Methods for determining the fatty acid content in vegetable drinks are also proposed.
