Определение морфологи- ческого состава туш овец

Разработан способ определения морфологи- ческого состава туш овец, который отличается тем, что выделяют мышечную, жировую и костную ткани только в тазобедренном отру- бе, а не во всей туше. Далее ткани порознь взвешивают и на основе этих показателей определяют их количество в туше в отдельнос- ти в зависимости от общей массы мышечной и костной тканей отруба по разработанным формулам. Установлено, что по сравнению с известным способом определения морфологического состава туш предложенный метод позволяет снизить трудоемкость в 8 раз и сократить время на выделение тканей в туше.

A method of determination of morphological composition of sheep carcasses is proposed differing from others that muscle, adipose and bone tissue is picked out only from the coxal cut, but not from the whole carcass. Then the tissues are weighed separately and on the basis of these values their amount in the carcass is determined separately depending on the total mass of muscular and bone tissues of the cut according to the derived formula. It was established that compared to the known method of determination of the morphological composition of the carcass, the proposed method allows to reduce labor content by 8 times and the time of removal of tissues from the carcass.
